Turkey & Cheese "Sushi" Rolls
It’s time to start thinking about back to school. Except we don’t even know if our kids are going back to school! Either way, it’s good to have some healthy options to either pack or have available at your kids fingertips.
My plan is to have the kids lunches ready to go, so they can just grab them at their lunch break even if I’m stuck working.
Here’s a cute recipe for kids, tweens and teens (and adults, why not!). Looks like sushi, but they are turkey roll ups. You can have fun with these and add avocado, chopped cucumber, etc. Anything goes.
I do want to add a couple of pointers:
if you prefer a dairy-free version, then try a cashew or almond based cream cheese. Kite Hill has one that is fabulous. Just use more of the non-dairy cream cheese and skip the mozzarella.
For a vegan version, use hummus instead of the turkey.
If you are going to use deli meat, make sure to purchase one that is hormone and antibiotic free, and no preservatives. I like Applegate Farms organic lunch meats.
